
With an absolutely dedicated handling of the care of grapes, our limited production allows us to make the difference and make our wines special.
We harvest by hand very early in the morning to avoid that grapes arrive hot to the cellar, in barrels of 20kilograms. Once the grapes arrive, and on a big table, local women will be in charge of selecting, by hand, the best grapes for our wines.
Only the selected grapes will pass through the grinder to our stainless steel tanks where fermentation with controlled temperature will last from 20 to 25 days.
From then on, with a manual press, we’ll get the quality and the quantity of wine that we need. We’ll let it settle and it will be kept in medium toasted American oak tree barrels for an average of 12 months.
